Viticulture: Purchased grapes, organic. Vinification: Pressed with a pneumatic press, ambient yeast fermentation, aged for 12 months on the lees in used barrels, racked and aged for an additional 6 months in stainless steel, no fining or filtration, minimal SO2 added before bottling.
